The Nordic Cookbook: Cardamom Cake (Kardemummakaka)

A couple of months ago I tried the cardamom cake recipe from The Nordic Cookbook by Magnus Nilsson, and it was really good. I recommend it. 

The dough in this recipe is very thick but does actually slightly rise, unlike the Swedish gooey cake (link here). It also smells amazing, if you like the smell of cardamom.

This recipe also calls for a light dusting of bread crumbs over butter in the pan.

I used turbinado sugar to sprinkle over top, since I didn't have any pearl sugar at the time. Other substitutions can also easily be made. This was one of a few recipes from the cookbook to actually be ready to come out of the oven at the time recommended in the recipe.

The cake is very thick bread type consistency, and very dense. It would be great dipped in coffee or tea with breakfast or for a snack or fika. This recipe gets a five out of five from us! To try it for yourself, go to page 597 of The Nordic Cookbook by Magnus Nilsson.
